Helianthus tuberosus, Sunchoke, Jerusalem Artichoke, Earth Apple, or Sunroot. A plant of many names. A hardy native root vegetable with a hundred small sunflowers to herald the end of summer. The tubers can be dug in spring or fall to be cooked and eaten similar to potatoes.
Pollinators love the flowers, birds will enjoy the seeds; deer and rabbits will munch the leaves & tender stems (I put a cloche over them in the early spring until they’re too tall, then animals don’t tend to bother them).
Low maintenance with very few to no pest pressure. I tend to plant mine in areas of the yard where nothing else seems to grow and these do just fine. You’ll get a bigger harvest with good loamy/sandy soil and watering through the summers. My two tubers I planted in fall yielded a 5 gallon bucket full the following year!
Hardy in USDA Zones 3-8. Plant in the back border of a garden where it won’t shade out the rest of your plants and you can admire the towering sunflowers. They can get up to 10 feet tall! If they start spreading out into your yard or garden beds just mow over or pull out when young.
Plant tubers 2 to 6 inches deep, 12 to 18 inches apart. Allow about 3 feet for the stalks to spread out when mature. Tubers can be planted as long as the soil can be dug in.
This listing is for half pound of ‘chokes. Pieces have not* been scrubbed of dirt. Pieces can be eaten or planted. May be large and small pieces.
