But it’s not just the Oak itself, it’s the transformation that happens to the Oak as a result of the seasoning and heating treatments during the coopering process - these result in the production of pleasant-tasting Oak lactones.
The craftsmanship is solid and excellent. They are hand made one at a time. Every one is slightly different from the next due to the natural variations of the wood and that they are hand made. The wood is tightly fitted together with no glues or other chemicals. To achieve this water tight fit, the metal bands are tightly wrapped and hammered around the barrel and then hammered together with rivets. There will be dark wood chips inside due to drilling of the holes which is the last step in the manufacture process. These barrels are the real thing, made just as if it were a large barrel the liquor companies would use. The inside is black due to the charring process (burning of the inside). This is done for the purpose of aging your whiskey which gives it that smoked oak flavor.
