It is cut from the whole boneless eye of the rib. The middle seam of fat marbling, significantly enhances the flavour, texture and moisture of the meat during cooking. It tends to be the first choice of serious steak lovers. A whole Scotch Fillet is a richly flavoured roasting cut which carves into attractive, neat serving slices.
