Introducing the Birria Taco Starter! Birria is a Mexican stew, known for being its deep, rich & addicting flavor. Traditionally, meat is slow-cooked until tender in a broth made from a blend of dried chiles (ours features roasted Guajillo & Ancho chiles), onions, garlic, and a spice blend featuring cumin, oregano, and bay leaves. Here at Cookwell, we wanted to pay homage to these great flavors and make it easy for anyone to enjoy it at home, so make your birria tacos yours, try out a quesabirria, but whatever you do make sure to serve with it’s signature birria consommé! How to prepare: Take a 3-4 lb. chuck roast and cut into quarters. Lightly season all sides of the meat with salt and pepper. Preheat a Dutch oven over medium-high heat. Add in 2 Tbsp of oil and sear meat on all sides. Remove meat from the heat and add in 1 chopped white onion and cook 2-3 minutes. Add meat back to the pot and pour in the Birria Starter. Bring to a gentle simmer. Cover, turn heat to low, and let cook for 2-3 hours. Alternatively, you can put it in the oven at 275 F for 3-4 hours. The Birria meat is ready when it’s fall-apart tender!
