Our sockeye salmon is sustainably wild-caught, ensuring the purest flavor and quality from the start. Upon arrival, the fish is flash-frozen to eliminate any potential impurities, preserving its integrity. We then carefully cure, air-dry, and smoke it using time-honored techniques that unlock its deep, savory character. The result? A richly flavored delicacy with a texture reminiscent of gourmet jerky. The center and lower portions offer a tender, chewy bite, while the top section—naturally thicker—has a firmer peel that enhances the artisanal feel of each piece. A whole fillet is approximately 10-15 ounces Half fillet is approximately 4-6 ounces  We deliver Tuesday through Friday. Please note, we are not liable for any delays by the shipping carrier. Due to a huge increase in orders, our current turnaround time is 3-5 weeks.  If you select 2nd Day air at checkout we will ship it with UPS second day air. This does not include the processing time.
