The Provence region offers the ideal growing conditions for the Grenache, Syrah and Cinsault grapes, which are the classic blend used to create AIX Rosé. With mineral-rich soils, 300 days of sun per year, and the cooling Mistral winds, these vineyards thrive in this picturesque setting. Maison Saint Aix is not only one of the largest domaines in the AOP Coteaux d'Aix-en-Provence appellation, but it is also one of the highest, sitting 420m above sea level. This elevation provides cooler nights and a greater Mistral effect, which helps dry the vines on dewy mornings, resulting in even better fruit. Over the past decade, the estate has undergone a complete transformation, with state-of-the-art equipment and modern winemaking techniques. From temperature-controlled stainless steel tanks to pneumatic presses and next-generation harvesting machinery, every step is taken to ensure the production of the highest quality rosé that only Provence can offer. The domaine's 50-60 year old Grenache vines guarantee the highest quality juice, while the fruit from the younger vines brings a refreshing element to the blend. To maintain the harmony of the land, a busy replanting schedule is in place, replacing up to 4 hectares of vines each year with new ones. In early September, the vineyards come alive with a whirlwind of activity from the break of dawn until noon. This dedicated effort guarantees the grapes' utmost freshness, the preservation of their delicate aromas and minimizes the risk of oxidation. It is through this meticulous process that AIX acquires its distinctive colour, delicate aromas, gentle acidity and impressive length. To maintain the harmony of the land, we run a busy replanting schedule - replacing up 4 hectares a year with new vines. In early-September, the vineyards are a frenzy of activity from very early morning to noon. Why? To ensure optimal freshness of the grapes, the conservation of the most delicate aromas and a reduced risk of oxidation. This is how we achieve AIX’s recognisable pale colour, delicate aromas, gentle acidity and great length. A blend of 60% Grenache, 20% Cinsault and 20% Syrah, this comes from Maison Saint Aix, owned and run by the Kurver family, whose 75 hectares are planted at an altitude of 400-420 metres. It has a lovely nose with a wisp of roses and Turkish delight, lots of florals to the bright strawberry and raspberry fruit.
