Stauning sits on the West Coast of Denmark facing the North Sea. It’s a quiet farm community of rolling hills dotted with seated moors. And it was here when in 2005 nine friends set up shop to learn the craft of making Whisky. They wanted to push the boundaries of Whisky by reviving traditional methods with 24 copper pot stills in an old abandoned butchery, surrounded by rolling hills of grain. The word “Kaos” in Danish means exactly what you think it does — “chaos”. Thorvald Stauning once said “Stauning or Chaos” and went on to win re-election as Prime Minister in 1935.
