Grow a garden filled with Tatsoi Mustard, from freshly harvested Brassica rapa seeds. Tatsoi Mustard will produce distinct, emerald green, spoon shaped leaves. The leaves are tightly packed, surrounding a center stem. The stalks are sweet in flavor, with a mustard taste, similar to Mache. The plants themselves will reach a mature height of 8 to 12 inches tall, and will spread about the same in width. Tatsoi Mustard is ready for harvesting in roughly 45 to 55 days. Tatsoi Mustard is grown as an annual plant. This means that they will grow quickly from freshly harvested seeds, producing their spoon shaped leaves through the summer months, only to be harvested later on. Some plant can be left to bolt during the end of the season to collect fresh seeds for regrowth the following season. The leaves can be enjoyed cooked, or raw and are an excellent additive to many culinary dishes, including stir fry. Sowing The Seed Mustard doesn't transplant well and is best sown directly in the garden. However, they can also be transplanted if peat pots are used, since peat pots will allow you to transplant the entire starter pot into the earth. In early Spring, begin by clearing your sowing area of all weeds and other unwanted plant life. Sow the seeds at a depth of 1/4" under topsoil. Check "Germination & Growth" for additional information on spacing. Growing Conditions Tatsoi Mustard will thrive in an area of full sunlight, and temperatures of at least 45F to 65F. They do not germinate well in the heat of summer, so keep this in mind when sowing. The soil should be fertile and rich in organic matter, but will also need to be well drained. To improve drainage, we recommend adding a light compost to areas containing hard, compact soil.  Be sure to provide ample moisture to your Mustard plants, but do not overwater as this can cause them to rot. Germination & Growth Mustard seeds will typically take anywhere between 7 to 21 days to successfully germinate, if optimal conditions are met. The plants will only reach a mature height of roughly 10 to 12 inches tall, and can spread about the same in width. The plants are best established in rows, spacing each row 18 inches apart from one another, and each plant 6 inches apart. Tatsoi is a delicious Mustard that produces emerald green, spoon shaped leaves, which are often sought after for stir fry. Harvesting Tatsoi Mustard Your Tatsoi Mustard leaves can be harvested at a young maturity of 20 to 25 days, for baby leaves, or at 45 to 50 days for full grown leaves. For adult leaves, look for leaves that are at least 4 inches in length. Pick, rinse and enjoy.
