Instructions:
Tea
For every teaspoon of Elderberries, use 2 cups of water and bring to a rapid boil.
Boil for 2 minutes and let steep for 15-30 minutes til Elderberries are soft and tender.
Elderberries Syrup
Ingredients:
1/2 cup dried elderberries
2 cups spring water
5 whole cloves (or 1 teaspoon ground cloves)
1-inch piece of ginger root (or 2 teaspoons dried ginger root)
1 teaspoon cinnamon
1/2 cup agave syrup or date syrup
Instructions:
Combine the elderberries, water, cloves, and ginger in a saucepan. Bring to a boil, then reduce heat and simmer uncovered for 30 minutes.
Strain off the liquid, and press any juice from the berries using the back of your spoon.
Cool slightly, then add the agave syrup or date syrup and stir until combined.
Let cool completely, then store in a jar in the refrigerator for up to 2 weeks.
Notes:
You can use fresh elderberries in this recipe, but they will need to be simmered for longer, about 1 hour.
If you don't have a strainer, you can use a cheesecloth-lined sieve to strain the liquid.
You can adjust the amount of agave syrup or date syrup to taste.
