Sage CandleHerbalist Sebastian Kneipp once said that growing Sage in your garden is like having your own pharmacy at hand. Some research suggests it helps with long-term memory, creative thinking, and attention span. Sage's botanical name comes from the Latin word "salvere", which — to no one’s surprise — means, "to be saved." Sage is my savior, its scent, my origin story. There are over 900 species of Sage worldwide, with 19 of them having their origins in California — growing along the Pacific Coast, crossing valleys, and threading their way up our mountain slopes. Among these native species are Hummingbird Sage, Pitcher Sage, Black Sage, Purple Sage, Mexican Purple Sage, and White Sage — all currently growing wild at the Estate after a Winter’s rain.When we started making products in the Goat Shed we mixed Sage into everything. We crushed it up and poured it into wax, fossilizing that feeling into our very first candle. We mixed Essential Oils of Purple Sage into our first homemade Hand Soap and Body Wash, and each shower became a daily sensuous ritual. I doubled the amount of Sage Essential Oils. Then I doubled it again. It is a magical thing.Heritage Extra Virgin Olive OilOlive Oil is the backbone of everything we cook during the Holidays. And Philip Asquith — a fourth-generation Olive farmer — grows them exclusively for us. His Olive Oil is the stuff of legend. The trees are over 150 years old and can’t be harvested with machines because the fruit will bruise. This makes the harvest slower but intentional, and the Olive Oil has a lot of complexity and nuance. During harvest, the Olives are picked by hand and pressed immediately. The result is this fresh, vibrant, green, and peppery Oil. However, this current harvest is very special. We had abundant Winter rain, mild Spring winds, and warm Summer sunshine.
