ANNATTO (ACHIOTE) PASTE (BIXA ORELLANA) Also known as ‘Recado rojo, Achiote en Pasta ’ Annatto (Achiote) paste is a popular South and Central American spice blend, consisting of annatto seed ( fruit-seed of the evergreen Achiote (Bixa orellana) tree) imparts a deep red hue to meat, rice and vegetables. Also imparts a vinegary flavor and slight peppery taste (not too strong), and it has vitamin C, iron and proteins.
