The predatory Jewfish have grown to be a popular and targeted species on the east coast of Australia. The back is mostly blue/grey, green, or golden in colour, with a silvery majority. They have a line of silver/white spots that follow the lateral line, and a black mark occasionally appears at the base of the pectoral fin.The well-liked eating fish mulloway has solid white meat and few bones. The flesh is delicious and flaky, and has a pleasing look (raw flesh has a pale colour that turns to white when cooked). Mulloway can be prepared as a whole fish, cutlets, or fillets; both when raw and cooked, the fillets hold together nicely. They tend to be a little dry, so they go well with curries or other moist meals.
