We have seen many versions of Uni, but this one from Canada is far and away the best we have found, even though it's not always perfect. It comes in a little tray with five pockets and is frozen in seawater to preserve freshness. The species is Strongylocentrotus Franciscanus (aka red sea urchin). Please note you are buying just the meaty piece of Uni, not the whole thing. If you would like the (empty) spikey shell, try here. Whether you drape over rice, nestle on a plain biscuit or eat alone, the taste and texture experience is utterly unique. This stuff is VERY HARD TO GET! We don't have a lot of options. We have to confess that occasionally, the second Uni in the pocket (the one underneath) may not be as pristine as we would like. We get a few complaints - about 1 tray in 70.
