Healthy Lunches focuses on whole food, plant-based recipes that completely vegan, oil-free, gluten-free, and sugar-free.
In addition to being a recipe book; this is also a guide for packing lunches. So while all of the recipes can be certainly consumed immediately after cooking, I recognize that about 75% of people work outside of the house and don’t have the leisure to step into the kitchen and whip up a fresh meal every day at lunch time. Therefore, I've organized the recipes into three convenient sections to suit your lifestyle and preferences:
1) Meals for the fridge, cooler, or lunchbox - For those who don’t have access to a kitchen or microwave at lunchtime... or who just can’t be bothered to reheat their food and want something easy and convenient
2) Meals that are easily reheated in the microwave - For those who prefer a warm lunch and have access to a microwave. (Please note that these meals can also be reheated over the stove if you prefer not to use a microwave.)
3) Meals that can be transported and enjoyed in a thermos - For those who prefer a warm lunch, but don’t have access to a microwave.
